Raw Collard Wraps with Miso Tahini Dipping Sauce

Raw Collard Wraps with Miso Tahini Dipping Sauce

Ever wish that you could make your salad just a little bit more interesting? Or want a super easy meal on the go that isn’t too messy?

I have the perfect recipe for you! Ideal for lunch or dinner at home or on-the-go, these wraps are so customizable and quick to put together and the sauce that I’ve created is SO delicious as well.

Makes: 2 wraps (serves two people or one hungry person!)

Prep time: 15 minutes for wraps and sauce

Cook time: They’re raw, so no cooking required!

Cost: ~ $6

  • 2 large collard leaves
  • your choice of vegetables (for these wraps I did rainbow carrots, cucumber and basil)

Wash the collards and veggies thoroughly. Grate or slice the veggies. Lay the leaves out flat and spread a bit of the sauce on the leaf (optional!) before lining the veggies up. Roll the wrap up like a burrito and cut in half, or just eat it like a burrito, liberally saucing up the bites!

  • 1/4 cup rice vinegar
  • 1 Tbs freshly grated ginger
  • 2 cloves sliced garlic
  • 1 tsp tamari
  • 2 Tbs light miso (South River Miso is the best miso in the market! I promise!)
  • 4 Tbs tahini
  • 2 Tbs honey (I use my friend’s raw honey from her bees, but if you don’t want to use honey, maple syrup or Bee Free Honee are great options!)
  • 1 tsp water

Add all ingredients into blender or food processor. Blend until smooth, test taste and adjust according to your taste…

Other wrap-filler suggestions:

  • lettuce
  • bell peppers
  • bean sprouts
  • sprouts
  • beets
  • tofu
  • tempeh bacon

…the list goes on! Use that imagination and get raw-wrappin!!

This incredible cutting board was custom made for me by Desert Ember Creations, out of recycled mesquite wood. It’s absolutely beautiful and one-of-a-kind and I am so glad to be creating delicious food on it!
