Are you ever in a Whole Foods Market or another natural food store and you see raw energy bites or raw round cookie balls for about $7 for 2 cookies!? I understand that many of these are from very small companies and they need to make a profit, but when it’s something so easy to make at home, I’d vote for that! 🙂
Here’s a recipe for some Pistachio Bites that my friend Emily made me and they are incredibly delicious. These raw desserts remind me of halva, but a way healthier version as they are plant-based and contain no refined sugar.
- Makes: about 16 bites
- Prep time: 10 minutes
- Cook time: n/a, they’re raw!
- Cost: ~ $4
- 2 cups pistachios (I like raw or roasted and unsalted)
- 3 Tbs almond butter (I like raw and creamy)
- 3 Tbs tahini
- 3/4 cup dates (I like medjool or honey dates)
- 1 Tbs coconut oil, melted
Melt your coconut oil. Shell your pistachios and pit your dates (unless you buy the ones that are pre-shelled/pitted).
Add everything to a food processor and start with the pulse setting to get everything broken up. Move to a higher, steady speed for about 3 minutes until everything is really well combined. I find I may have to stop it a few times and break up the globs that form so it can all mix evenly.
Form your raw cookie balls and store in a tupperwear in the fridge for daily snacking.
If you’re going to be traveling with them in hot weather, I’d suggest keeping them in the freezer for a day to really firm them up before transportation.
